FROM THE EARTH, TO YOUR GLASS
STEP 1: PICKING THE POMEGRANATES
Once ripe, pomegranates are handpicked from orchards in the Goychay region of Azerbaijan. Exclusive to the region, the “Guloyusha” variety is known for its ruby-red colour distinct sweetness.
STEP 2: JUICING
The fresh pomegranates are freshly squeezed at the peak of their ripeness, creating a sugary juice called “must”.
STEP 3: FERMENTATION
Yeast is added to the must, commencing fermentation. Once all the sugars have converted into alcohol, fermentation is complete. The liquid is then run through a filter for clarification.
STEP 4: AGING AND BOTTLING
Our wines are aged for 12 months in oak barrels before being bottled and sent off to be enjoyed.
